Chocolate mousse

Something pretty amazing happened yesterday. I cooked. That’s right folks, I stood at the stove and actually produced food. Edible food. Pr-etty cool.

I should probably tell you that I ‘cooked’ the easiest dessert in the world and it wasn’t perfect and so I probably shouldn’t be too proud, but here goes. Check me and my hands making chocolate mousse.


30g of butter
2tbsp of hot water
0.5tsp of vanilla extract
150ml of double cream
75g of small marshmallows
125g of 70% cocoa dark chocolate

Firstly, melt the butter in a heavy-based saucepan and add the water.

Next, add the marshmallows and the broken chocolate to the pan. Heat gently and stir until all the ingredients have melted together into a silky, smooth mixture.

melted chocolateNext, add the vanilla extract and double cream to a separate bowl, and whip until you have soft peaks. (Careful – I over-whipped here and my mousse was not as light and airy as it should have been!)

Allow the chocolate mix to cool slightly, then fold gently in to the whipped cream.

When smooth, pour the mixture into your chosen containers – ramekins or small bowls will work perfectly. Then place the bowls into the fridge and leave to set.



Take the mousse out of the fridge approx 30 minutes before eating. Then…. gobble gobble gobble, yum yum yum. Is this not the simplest recipe in the world? (I know, I still messed up. But it tasted good!)

  1. I have a total weakness for chocolate mousse. I was so thrilled to find a recipe that used natural yoghurt instead of cream! You can’t taste it, and it means it’s practically a health food so you can have more! Result.
