Egg, bacon and watercress salad

Time for another salad. Easy and yummy, it’s really all I’m looking for in a recipe.

Ingredients

3 rashers of streaky bacon (smoked or unsmoked depending on preference) 
watercress 
1 medium egg 
1 slice of fresh bread 

 

Recipe 

Put 3 rashers under a medium grill and grill until crisp through. Whilst the bacon is grilling, lightly toast a slice of bread and boil your egg. What is better than fresh bread?

There are many ways to boil an egg. Seriously. The internet confuses me often, but type in ‘the perfect egg’ and the instructions from super-chefs are there in the masses. I followed Jamie Oliver’s technique and it worked wonders. Fill a small pan with water and bring to the boil, then add a pinch of salt and your egg. Boil for 5 mins. Put the egg into a bowl of cold water and peel. 

Lightly dress your watercress salad if you wish, then slice your egg and hope it’s all soft and runny inside. 

It’s like a healthy version of your fry-up. Little salt and pepper to season and you’re good to go.
