This doesn’t really require a recipe; it’s a salad. But I’m posting it as more of a suggestion for those on the 5:2 fasting diet. And it turns out there’s quite a few of you.
Recipe serves one.
15g rocket, 20g spinach, 10ml olive oil, 100g broad beans, 150g beetroot and 30g feta.
Put it all in a bowl and there you have it.
